you have to mix the chocolate syrup with a bit of ice cream before you put
in the soda water.....they just mix the soda water with the syrup and then
add the ice cream afterward. This is classic, "incorrect" when it comes to
making ice cream sodas.....I am afraid that it is a lost art......

An egg cream is a NYC delight, no eggs & no cream, as somebody who
lived in NYC, and frequented delis, I would have thought you would be
familiar with that beverage.

They look and sound good, but I didn't hear of them while I lived in the NYC
metropolitan area.....I first heard of them after 1960 sometime, when I was
living in San Francisco......I did drink something like that when I was
young.....It was a chocolate soda made without ice cream......kind of a
mixture of milk, chocolate syrup and carbonated water, but I forget what it
was called..... When I was growing up, I really wasn't a "New York City"
person....I grew up in Lynbrook, on Long Island, just outside the New York
City limits, in Nassau County, so there are a few NYC traditions that I am
unfamiliar with.
